Greek Seasoning Recipe

And now it's time for greek seasoning recipe.

This is a spice blend with mint, garlic and other spices that is great for adding new flavors to your meals. We highly recommend greek seasoning to anyone that enjoys foods with great flavour. Greek Seasoning isn’t spicy hot. It’s simply a spice blend with great Mediterranean taste.

To make your own Greek seasoning blend, grind 4 tablespoons oregano, 6 teaspoons fennel seeds, 6 teaspoons dried lemon grass and 3/4 teaspoon black pepper to a fine powder. Mix well and store in an airtight container.

Recipe for Greek Marinated Chicken

Ingredients:

* 1 pound chicken breasts and/or thighs
* 2 tbsp Greek Seasoning
* 1/2 cup vinegar
* 1/4 cup olive oil

1. Mix the vinegar, olive oil, and Greek seasoning together in a pyrex cup.
2. Wash chicken well, and place in a 1 gallon Ziploc bag.
3. Pour the Greek Seasoning mixture over the chicken, seal the boag, and roate to spread the seasoning over the chicken.
4. Place bag in refrigerator, and marinate for 2 - 3 hours, flipping the ziploc bag over ever 30 minutes so that the marinate gets evenly distributed over the chicken.
5. Remove chicken from the ziploc bag, place on a baking dish, cover and bake at 350° F for one hour. Remove cover during last 15 minutes.

Serve with Greek Salad

Baked Greek Chicken Salad

Ingredients:

* 4 boneless, skinless chicken breast halves
* 2 ounces feta cheese, crumbled
* 1 teaspoon oregano
* 1 teaspoon Greek seasoning
* 1 package mixed Italian salad greens
* 1 lemon, juiced
* 1/2 teaspoon garlic powder
* 1/4 cup melted butter
* 1/4 teaspoon freshly ground pepper
* Tomato-Cucumber Salsa (recipe follows)
* Black olives
* Pepperoncini pepper

Tomato-Cucumber Salsa:

* 2 diced plum tomatoes
* 2 tablespoons red wine vinegar
* 2 tablespoons vegetable oil
* 1 tablespoon olive oil
* 1 peeled and sliced small cucumber
* 1/2 green pepper julienned
* 1/4 sliced purple onion
* 1/8 teaspoon each freshly ground pepper
* Salt
* Basil
* Oregano
* Greek seasoning,
* Sugar
* Dry mustard

1. In medium bowl, mix together all the salsa ingredients and chill until ready to serve.

Cooking Direction

1. Place chicken in baking dish.
2. In medium bowl, mix together butter, lemon juice, pepper, garlic powder, oregano and Greek seasoning; pour over chicken.
3. Place chicken in 350°F.
4. Oven and bake for about 50 minutes, uncovered, basting occasionally.
Place salad greens in large serving bowl.
5. Top with Tomato-Cucumber Salsa
6.Slice chicken in thin strips and arrange on top of salad.
7.Sprinkle with feta cheese and garnish with olives and pepper.

Three Bean Salad

Ingredients:

1 (16-ounce) can dark red kidney beans, drained
1 (14.5-ounce) can cut green beans, drained
1 (14.5-ounce) can cut golden wax beans, drained
1 cup sliced fresh mushrooms
1/2 cup chopped red bell pepper
2 tablespoons minced red onion
1/2 cup vegetable oil
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
2 tablespoons Greek seasoning

In a medium bowl, combine first 6 ingredients.

In a small bowl, whisk together oil, vinegar, mustard, and Greek seasoning. Pour over bean mixture; cover and chill 4 hours, stirring occasionally.

Greek Shrimp Bruschetta

Ingredients:1/3 cup olive oil, divided
3/4 pound small fresh shrimp, peeled and deveined
1 1/2 tablespoons minced garlic
2 large plum tomatoes, seeded and finely chopped
1/2 cup sliced green onion
1/2 cup crumbled feta cheese
1/4 cup finely chopped parsley
1 tablespoon fresh lemon juice
2 teaspoons minced fresh thyme
1 teaspoon Greek seasoning
1 French baguette, cut diagonally into 1/4 inch-thick slices

Preparation

Heat 1 tablespoon oil in a large skillet over medium-high heat. Sauté shrimp and garlic 3 to 4 minutes until shrimp are cooked.

Transfer to a small bowl and chill.

Combine tomatoes, 1 tablespoon olive oil and next 6 ingredients in a large bowl; stir in shrimp. Refrigerate until ready to serve.

Place bread slices on a baking sheet; brush bread with remaining olive oil. Bake at 375º for 8 minutes. Spoon 1 heaping tablespoon shrimp mixture onto each bread slice.
