Greek Rice Salad Yield: Makes 6 to 8 servings * 3 cups cooked medium grain brown rice * 1 cup red grape tomatoes; sliced in half * 1/3 cup pitted Kalamata olives, sliced * 1/4 cup Feta vinaigrette dressing * Salt and freshly-ground pepper to taste * Romaine leaves
Combine rice, tomato halves, olives and vinaigrette in a large mixing bowl. Season with salt and pepper. Serve with whole Romaine leaves, which can be used like taco shells to hold filling. Alternatively, arrange Romaine leaves on a platter and place rice mixture on top of greens. Chill. A great sald to start your meal As a main course i have another tasty greek rice recipe for you. * 1 cup low-fat yogurt * 1 clove garlic, minced * 1/2 teaspoon dried oregano * 1/4 teaspoon black pepper * 1 pound boneless, skinless chicken breasts (or 2 pounds for ‘planned-overs’) * 1/3 cup feta cheese, crumbled (or 2/3 cup for 2 pounds chicken)
CURRIED RICE While the chicken marinates, melt a tablespoon of butter in a large skillet. Add chopped onion, slivered almonds, a chopped red or green pepper and a couple of chopped carrots. Sauté til just cooked. Stir in a teaspoon of curry powder, salt and pepper and two cups of cooked rice and warm through.Whisk together the yogurt, garlic, oregano and black pepper in a large bowl. Cut the breasts into serving pieces and stir into the yogurt. Cover and refrigerate for 30 minutes. Place an oven rack just below the broiler and preheat the broiler. Cover a baking sheet with foil. Remove the chicken from the yogurt (discard what remains) and arrange smooth-side down on the foil, thicker pieces in the center where they’ll be closer to the heat. Broil the chicken for 6 minutes, then turn over. Sprinkle with feta and broil for another 5 minutes or until a knife inserted in the center shows juice that runs clear.
