Ingredients: 3/4 lb Beef or Pork (Minced)(optionally) 1 Handful Bread Crumbs 1 1/2 Cup Olive Oil 2 Medium Onion (Chopped) 1 Bunch Parsley (To taste, diced) 1-2 Pinch Pepper (To taste) 6 Medium Peppers 1 1/2 Cup Rice 2-3 Pinch Salt (To taste) 2 Cup Tomato Juice 6 Medium Tomatoes
Directions: * Slice-off the top of the tomatoes (& peppers) and carve-out the inside.
* Save the "carvings", mash it and mix it with the rice, onion, parsley, salt & pepper and half the oil. * Stuff the tomatoes (& peppers) and lid them with their previously sliced-off tops and place them in a pan. * Top with the tomato-juice, bread-crumbs and the rest of the olive-oil and bake in a medium oven for about 1 hour. * Note: For meat lovers, saute minced meat with the onions and add to the rest of the ingredients.

Directions: * Cut the meat into 2 x 2 inch cubes. * Mix with the rest of the ingredients and marinate, preferably overnight, in the refrigerator. * Skewer with or without your favourite vegetables( like mushrooms, peppers, onions or tomatoes) and barbecue at medium heat. * Baste with an olive oil, lemon juice and oregano brine. * **For a little bit of tang, add 1/4 cup fresh lemon juice to marinade!

Directions: * Mix the ground beef with the bread crumbs (slightly moist), garlic, cumin, and salt & pepper. * Knead into elongated meat balls (see photo) and fry in olive oil. * Drain most of the oil, saving 1/2 a cup. * Use it in a clean pan to fry the tomatoes, peeled and grated. * Add the sugar a bit of salt & pepper and simmer for 10 minutes. * Place the meat balls in the pan and simmer for a while longer before serving.
